- Blanch pork in boiling water 15 seconds. 
- Wash beans several times, then cover with about 3 gts water. Heat to boiling, cover, simmer about 2 hours. 
- Drain. SAVE LIQUID. Place beans in large bowl, add remaining ingredients except pork. 
- Turn into casserole, burying pieces of salt pork throughout. 
- Bake at 250° for 3-4 hours. Check if beans are drying out and add a little reserved liquid. 
- Do all this day before, refrigerate overnight. You probably shouldn't cook The beans longer than 4 hrs or they'll get mushy when they get re-heated. 
- Day of serving, re-heat at 250° another hour or so until piping hot. Remove cover last 1/2 hr to brown.
