Coconut Milk Icecream

- 14 oz coconut milk
- 11 3/5 ounce sweetened condensed coconut milk
- 1 cup almond milk
- 4 egg yolks
- 1 tablespoon vodka
- 1/4 tsp xanthan gum
- 1 salt large pinch
- 1 tsp vanilla extract
- In mixer combine the milks and beat to combine 
- Heat over medium heat almost to boiling 
- Beat egg yolks in mixer and temper with hot milks 
- Heat over medium low heat until thickened somewhat 
- Cool over pan of ice cubes. Add vodka. Sift in xanthan gum while stiring with whisk. Add salt and vanilla. 
- Cool over ice or in fridge until ready to freeze
