Coconut Milk Icecream

Servings 4 servings

Ingredients
  

  • 14 oz coconut milk
  • 11 3/5 ounce sweetened condensed coconut milk
  • 1 cup almond milk
  • 4 egg yolks
  • 1 tablespoon vodka
  • 1/4 tsp xanthan gum
  • 1 salt large pinch
  • 1 tsp vanilla extract

Instructions
 

  • In mixer combine the milks and beat to combine
  • Heat over medium heat almost to boiling
  • Beat egg yolks in mixer and temper with hot milks
  • Heat over medium low heat until thickened somewhat
  • Cool over pan of ice cubes. Add vodka. Sift in xanthan gum while stiring with whisk. Add salt and vanilla.
  • Cool over ice or in fridge until ready to freeze
