Lima Bean Casserole

- 1 lbs Iarge lima beans
- 1 medium onions grated
- I clove garlic minced
- 1 tsp dry mustard
- 1 1/2 tsp salt
- 1/4 cup molasses
- 1 8 oz cans tomato sauce
- 1 Cans tomatoes about 2 cups
- 1/4 lb salt pork cut in pieces
Blanch pork in boiling water 15 seconds.
Wash beans several times, then cover with about 3 gts water. Heat to boiling, cover, simmer about 2 hours.
Drain. SAVE LIQUID. Place beans in large bowl, add remaining ingredients except pork.
Turn into casserole, burying pieces of salt pork throughout.
Bake at 250° for 3-4 hours. Check if beans are drying out and add a little reserved liquid.
Do all this day before, refrigerate overnight. You probably shouldn’t cook The beans longer than 4 hrs or they’ll get mushy when they get re-heated.
Day of serving, re-heat at 250° another hour or so until piping hot. Remove cover last 1/2 hr to brown.
