Coconut Milk Icecream
Prevent your screen from going dark
- 14 oz coconut milk
- 11 3/5 ounce sweetened condensed coconut milk
- 1 cup almond milk
- 4 egg yolks
- 1 tablespoon vodka
- 1/4 tsp xanthan gum
- 1 salt large pinch
- 1 tsp vanilla extract
In mixer combine the milks and beat to combine
Heat over medium heat almost to boiling
Beat egg yolks in mixer and temper with hot milks
Heat over medium low heat until thickened somewhat
Cool over pan of ice cubes. Add vodka. Sift in xanthan gum while stiring with whisk. Add salt and vanilla.
Cool over ice or in fridge until ready to freeze
