Cranberry Pie

Ingredients
  

  • 60 grams All purpose flour 1/2 cup
  • 297 grams Sugar
  • 1 teaspoon Cinnamon
  • 24 ounces Cranberries Fresh or Frozen
  • 1 cup Golden Raisins 250 ml
  • 2/3 cup Walnuts Chopped 167 ml
  • 1/2 cup Fresh Orange Juice 125 ml
  • 1 1/2 teaspoon Orange zest or Lemon zest Finely grated
  • 5 tablespoon Unsalted butter Melted
  • 1 Egg Mixed w/ 2 tsp water – for brushing

Instructions
 

  • Preheat oven to 375
  • Combine flour, sugar, and cinnamon, and set aside.
  • Chop cranberries in food processor until largest pieces are pea-sized (several pulses).
  • Combine cranberries, raisins, walnuts, orange juice, orange zest and melted butter.
  • Line pie plate with bottom crust. Sprinkle on 1/4 cup flour-sugar mixture. Pile in 1/2 cranberry mixture, then 1/2 of the remaining flour-sugar, then the remaining cranberries,then the last of the flour-sugar.
  • Top with top crust, brush with egg-water mix, cut several slits for steam to escape.Bake at 375° in convection oven for about 60 minutes.
