Line pie plate with bottom crust. Sprinkle on 1/4 cup flour-sugar mixture. Pile in 1/2 cranberry mixture, then 1/2 of the remaining flour-sugar, then the remaining cranberries,then the last of the flour-sugar.
Top with top crust, brush with egg-water mix, cut several slits for steam to escape.Bake at 375° in convection oven for about 60 minutes.
