Cape Breton Oatcakes

Ingredients
  

  • 1/2 cup Shortening
  • 1/2 cup Butter
  • 1/2 cup Sugar
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Baking soda dissolved in 2 Tb hot water
  • 1 1/2 cups Flour
  • 1 1/2 cups Rolled Oats
  • — METRIC —
  • 95 gms Shortening
  • 113.40 gms Butter
  • 100 gms Sugar
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Baking soda dissolved in 2 Tb hot water
  • 217.50 gms Flour
  • 120 gms Rolled oats

Instructions
 

  • Preheat oven to 350°
  • Mix shortening, butter, sugar, and salt in mixer. Add hot water and baking soda. Add 1 c. rolled oats and 1 c. flour. Mix in remaining oats and flour with wooden spoon. Roll out on floured surface about 1/8″ thick. Cut into squares or rounds. Bake at 350° for 10-12 minutes until very slightly brown.
